Alsatian almond tart

Published recipe for Alsatian tart dough

½ c. unsalted butter
½ c. sugar
1/8 t. salt
3 egg, at room temperature
½ t. vanilla
2 T. grated orange zest
1 c. flour

Cream the butter, sugar, and salt until light and fluffy, then add the eggs one at a time and beat until smooth after each addition. Add the vanilla and orange zest, then stir in the flour and salt. Using a spatula, smooth the batter into the tar pan, pushing it up against the edges to make a slight rim. Fill and bake.

Makes one 11-inch tart.

Almond tart

½ c. unsalted butter
1 c. sugar
1/8 t. salt
3 egg, at room temperature
1 t. vanilla
1 T. cinnamon
1 c. flour
a bunch of almonds (approx. 1 cup)

Follow recipe as above and fill with almonds. Bake at 375° for 30 min.
