million ways to make it. Here's an excellent basic recipe.
Put about 2 tablespoons olive oil in the bottom of your pan. Slice
a medium yellow onion into about 12 wedges. When they're starting
to brown add 3 or 4 minced cloves of garlic. When they're brown
add the tomatoes (a big can of plum tomatoes you've pulled apart
with your fingers will do quite nicely). Also now add salt (about
a teaspoon), pepper, a bay leaf, oregano, basil, and whatever else
you like (rosemary, thyme, whatever works for you). Bring to simmer.
If you're wanting to add wine, now do it (about 1/2 cup to a cup).
Let simmer a minimum of 10 minutes and as much as 2 hours (if a
long time be sure to check whether it needs some water added).
I usually let it cook for at least 20 minutes, which gives a pretty
watery sauce (good for shells and ziti), but with something like
spaghetti you generally want a slightly thicker sauce (cook 45
minutes or add a little tomato paste).
